Miyagoshi Syouki 3000 – Finishing Sharpening Stone (#3000) Miyagoshi Seito (宮越製陶) is a Japanese manufacturer based in Kyoto, specializing in handcrafted vitrified sharpening stones. The Syouki 3000 is a high-quality finishing stone, designed for the final stage of sharpening, where precision and a smooth cutting edge are crucial to achieving full sharpness. The production process utilizes high-purity aluminum oxide (Al₂O₃) abrasives, which are bonded into a structure using a high-temperature molten binder. The entire stone is formed under high pressure and then fired at temperatures up to 1300°C. The resulting stone is characterized by high durability, resistance to chemical and atmospheric factors, and very stable working flatness. The #3000 grit (approx. 4.5 micron grain) is responsible for the final stage of sharpening – smoothing the blade surface, removing burrs, and improving the sharpness and finish of the edge. This stone is ideal for sharpening kitchen knives, craft tools, and steels of varying hardness, in applications where not only sharpness but also edge durability is important.
