Ohtani Sharpening Stone, Kitayama 8000, main body only (no stand, no nagura stone) For a long time, Kitayama 8000 has reigned as the leading #8000 grit knife chosen by professional sharpeners. This whetstone is beloved by experts for its ability to subtly obscure the base metal of Japanese knives, creating a beautiful hazy effect. It offers the gentle sharpening feel characteristic of resinoid whetstones. Made using the resinoid manufacturing method. This is a whetstone that we recommend using after letting some of the clay dissolve on it, rather than immediately applying it to a knife. Although resinoid grinding wheels generally do not have voids, we recommend soaking them in water for about a minute before use. This is a product from Ohtani Sharpening Stones. The highly regarded "Kitayama 8000" super-finishing whetstone.
